ne ideas on a good way to cook it? like scallops? does it need leaching in water first? like shark?

I've eaten stingray in singapore a few times and its delicious. They BBQ the wings over charcoal with the skin on (wrapped in banana leaves during part of the cooking I think) with some kind of chili sauce applied before cooking then its like eating a flounder its got a soft boney bit in the middle and you flip it over and eat the other side - these seem to be off small rays about 500 mil across. I'm going up there again soon, I'll see if I can get the recipe or I'll spy on them like I did one other time but I drank too much tiger beer and couldn't retrieve the data the next day.

hmmmmmmmmmm yeah! sembawang plaza for hot plate prawns and giant bottles of ice cold tiger - hmmmm hmmmmm damn good - much betterer than the chilli chicken down the strip (blllluuuuurrrrgggghhhh) or that coulda been the many tigers/ankors before?

Is there any difference in the taste of stingray compared to skate? I've eaten skate before and it was quite a dense juicy meat. I can't remember it tasting too much like flounder though.

Talking about using banana leaf, it is very useful if you are pan frying or barbecuing anything as it stops the fish from sticking to the frying pan, prevents over-cooking and also give the fish a very exotic smell. I have got 4 banana trees in the backyard specifically for this purpose, but during winter, the leaf tend to break up.
