St. Louis Pork Ribs

Smoked time: 3hrs at 275 Fahrenheit
Wood used: Cherry 
Seasoning:
1) Pork Rib Rub, The Four Saucemen, 25% 
2) Soft COQ, Rum and Que, 25%
3)Fergolicious Luv Red Hot, Fergolicious, 50% 
First two hours smoked uncovered with occasional moistening, i've used apple juice every 20min.
After two hours wrap the ribs in tinfoil(i always use two layers of tinfoil just in case of puncture) adding maple sirup or honey, i'v used manuka honey & some butter and placed in the smoker for additional one hour at 275ºF.
