This would have to be oine of the best videos showing how to fillet rig, aka-Lemon Fish and Grot Shark(wsac term).. Dean Grooby would have to be one of the best in the trade. He teaches guys in the South Island via the fisheries..

Nice, but with that much water on the filleting bench - I now know why commercial fillets stink after 24 hrs.

I dont understand the comment.
Before coming home in the boat, we fill a 10L container with clean sea water.
Fish are filleted/ skined leaving only pin bones in and rinsed in the sea water.
Pin bones are then removed and a final rinse to remove any stray bone/ scale what ever for clean fillets.

It is my understanding that salt water fish should not be rinsed in fresh water cause it does something to the structure of the flesh cells or proteins
And visa versa for fresh water fish.

The remaining salt water is put in containers in the bait freezer and used for sea ice next trip out

Also if forget to fill the sea water container.. approx 4 to 5 teaspoons per Liter of salt is about the same as sea salt.
