Run the grill very hot - 500f+
That way i can move my grill plates with the steak away from direct heat or melt some of the beautiful fat. Cooked this on cherry wood with my recent favourite seasoning Cimarron Docs. Finish at 55cel, i've slightly overcooked. Already have finished half of it, served this only with freshly made very hot chimichurri.

Mate looks outstanding - if you get the chance to do a beef shin on it you wont regret it

Also if you can get a rotisserie slice the rump cap into 4 sections and place on rotisserie  and smoke over cherry again and you have picanha. beautiful way to eat it.

I was really considering getting an offset smoker/wood BBQ/whateverelse is around because I'm an absolute carnivore and I love seeing pictures of burnt on the outside but raw on the inside meat. Fish, venison, beef, sheep, pork and poultry (chicken, turkeys & geese - but ducks are good too but I have a thing for birds and if they weren't so tasty I wouldn't eat them) are an absolute must in my household. The trouble is I can think of no better thing to do than drink beer all day (you already do Smudge) while cooking up all  that good stuff. 

So I'm stuck with the gas barbie and frying in the kitchen. I'm jealous as
