Anyone tried putting whole fish in a hangi?...if so what techniques work?....any help appereciated!

I was thinking oven tray with a lid or tinfoil in the top basket?

Hi Kerren,Have tried Eel and it was really nice,but make sure it`s on the bottom of your hangi or it will drip all over the stuff on the bottom.

Wrapped in Tinfoil or oven bag.

We often cook trout in newspaper on the beach.Light a fire and wait till it dies down,and you have plenty of embers.Scrape off half the embers.Wrap your fish in brown paper or three sheets of wet(Soaked)newspaper.Place on embers and cover with the rest of the embers.Bury the lot in the sand.You will have a feed in about twenty minutes,and it`s delicious mate,trust me!

You can season it with what ever you like,but i still prefer the basic salt and pepper.

Any fish can be cooked the same way.Just peel off the paper and dig in.

Thats the best way i know of having your own mini hangi.

try this Kerren...... a big snapper up to or around tweenty pound will do could use a smaller one but i did this at a party one year and i still don't know what it tasted like as by the time i filled in the pit it was all devoured, eveyone said it was fantastic......

gut and gill the snapper only fill gut cavity with chicken or turkey stuffing will take two lots of chicken stuffing, now slice across body right to the back bone about 4 cuts each side, fill in cuts with what ever takes your fancy, wrap in tin foil, dont scale the fish it helps stop burning into the flesh, dig small hole in ground to take you fish about 3ins all round wider and about 10ins deep, place one hole bag of charcoal into the pit and light it, wait til all are glowing move it all out to the edges drop your fish in and cover it with the glowing embers when it has died down slip onto a lrg tray and go forit before its all gone like what happened to me... save me some because i would love to what its like.......

ive got three here in the deep freeze if your interested i need one more before me mate will smoke them just to balance the smoker out..... he hangs them back to back so three's uneven need just one more or two if you take one..........
