Hello all, Here is a very nice recipe for BroadBill, But is just as tasty useing any Billfish or even puka is nice, and also very nice when used with venison steaks. To start with Cover the bottom of an oven tray with finely chopped onion and crushed pineapple, Put what ever fish or meat you are going to cook on top of that and then cover with more onion and pineapple, add salt and pepper to taste, put a nob of butter on top of each piece, Pour some of the pineapple juice over the top, then sprinkle a teaspoon of chinese five spice over the whole lot, ,Then bake till cooked in moderate oven,dont over cook or tastes like cardboad.
