Serves 2-4
1) Marinate the raw fish in the lemon juice and salt overnight.
2) Drain the fish and add to a bowl with the tomato, cucumber, onion, chilli, coconut milk and coriander if using. Season with salt and pepper and mix to combine.
3) If you’re using avocado in your ceviche, add this just before serving.
4) Serve the ceviche on a bed of shredded lettuce with fresh tortilla chips. ENJOY!
