Stuffed Kingfish

Get a slab of kingfish fish (skin on ) can use any sort of fish .

Cut out the backbone and any ribs then cut a couple of slots stop/starting bout 1 cm from the ends

Start stuffing the slots with whatever yummy stuff that takes your fancy, in this case i grabbed a can of herbed tomatoes and some tabouli

more sauce ...

Smear whatever else you want sauces herbs all over then chuck in an oven /smoker/ bbq/microwave /whatever source of heat you choose..(could wrap in tinfoil but wont go crispy

Cook for a while preferably on a highish heat...

Fish will cook quite quickly so dont over do it for too long

Aaa crispy on the edges moist in the middle...

Squirt of lemom, splash of tartare sauce and some greenery for colour ...

Voila

Can add whatever sides to this dish ..grated cheese ....potato wedges ....rice ...pasta ...

if it wasnt for the tartare sauce you d almost say it was a low fat healthy dishski ...
