Snapper, Prawn & Chorizo Kebabs

Ingredients

• 2 Tbsp olive oil
• 1 1/2 Tbsp tomato paste
• 1 1/2 tsp smoked paprika
• 1 tsp ground cumin
• 1 tsp sea salt
• Zest of 1 lemon
• Juice from 1/2 a lemon
• 12 large prawns
• 3-4 snapper fillets cut into large bite size pieces
• 1-2 chorizo sausages cut into thick rounds

 

Method

1) Place the first seven ingredients in a small bowl and mix to combine.

2) Thread the prawns, snapper and chorizo onto four skewers. I used three pieces of each per skewer – add more if desired.

3) Place the skewers on a dish and brush with the tomato paste marinade. Set aside for 20 minutes.

4) Preheat the BBQ and when ready, place the skewers on the BBQ grill plate and cook for 5-8 minutes or until the prawns and fish are cooked through.

5) This makes for a light meal so serve the skewers with a salad and some smoked paprika mayo.
