Smoked Kingfish Scrolls
Makes 12
• 2 cups self-raising flour
• 1/2 tsp salt
• 1 tsp sugar
• 2 Tbsp Italian parsley, chopped
• Pinch cayenne pepper
• 2 cups grated cheese - tasty cheese works best
• 1 cup whole milk
• 200g smoked fish, pulled
• 150g cream cheese, cut into small chunks
1) Preheat the oven to 220°C.
2) In a large bowl combine the first five ingredients and 1 cup of the grated cheese.
3) With a butter knife, mix in the milk until just combined.
4) Tip onto a floured surface and roll out the dough to approx. 25x40cm (rectangle shape). Don’t roll it too thin.
5) Scatter over the smoked fish, cream cheese and top with the remaining grated cheese.
6) Gently roll the scroll starting at one end. Place the seam side down and cut into 12 slices.
7) Line an oven tray with baking paper and place the scrolls on their sides. Brush with milk and bake for 20 minutes or until golden.
ENJOY these scrolls fresh out of the oven.
