Salsas For Seafood

Green Salsa

Ingredients

  • 1 clove garlic
  • 2 tbsp fresh chives
  • 1 cup ?at leaf parsley
  • ¼ cup fresh mint
  • 3 tbsp fresh dill
  • 3 tsp lime juice
  • 3 tbsp capers
  • 5 anchovy ?llets
  • ½ cup olive oil

Method

1. In a food processor place the five ingredients (garlic, chives, parsley, mint and dill) and process until combined.

2. Add the following three ingredients (lime juice, capers, anchovy fillets) and process until combined.

3. With the motor running, add the oil in a steady stream until mixture is smooth. This salsa goes great with ?sh and prawn kebabs. ENJOY!

Mango Salsa

Ingredients

  • 1 ?rm mango, diced
  • 1 small red capsicum, diced
  • 1 ?rm avocado, diced
  • ¼ cup fresh coriander, ?nely chopped
  • 1 tsp castor sugar
  • 6 tsp lime juice

Method

Place all diced ingredients and coriander in a bowl. Mix the sugar and lime juice together then pour over the mango salsa. Enjoy this salsa with a chilled salmon or prawn salad.

Roasted Capsicum Sauce

Ingredients

  • 1 roasted capsicum (you can buy them in a jar or you can roast your own)

  • 2 cloves garlic
  • 1 tbsp fresh basil, ?nely chopped
  • ½ cup olive oil
  • Salt and fresh ground pepper to taste

Method

1. In a small frying pan cook the garlic until it starts to brown. Don’t burn it.

2. In a food processor, process the capsicum and garlic until combined. With the motor running, pour the oil in a steady stream until mixture is smooth.

3. Warm the sauce gently in the microwave or frying pan. Gently stir in the basil and season to taste. Try this sauce on tuna or king?sh.
