Kingfish with Salsa Verde
Salsa:
1/2 cup basil
1/2 cup flat-leaf parsley
1 tsp mustard powder
1tbsp capers
1 clove garlic
Juice of 1 lemon
1 anchovy (optional)
2 tbsp olive oil (add more if desired)
Salad:
1/4 cup pine nuts, toasted
1 can cannellini beans rinsed and drained
Small handful of rocket to serve
4 kingfish steaks
1 tbsp butter
1) To make the salsa, place the first seven ingredients in a blender or food processor and whizz to combine. Add olive oil and whizz again. Add more oil to get your desired consistency, then season to taste.
2) Pat dry the kingfish steaks and then season with salt and pepper.
3) In a medium frying pan, add 1 tbsp olive oil and 1 tbsp butter. When the butter starts to brown, add the fish and cook for three minutes on the first side, then lower the heat and turn the fish to cook for a further three minutes, or until the fish is opaque and cooked through. Cooking time will vary depending on the thickness of your fillet.
4) Combine the beans, rocket, and 1 tbsp of pine nuts with 2 tbsp of the salsa. Add more if desired.
5) Serve the kingfish steaks on top of the rocket and bean salad topped with a dollop of salsa verde and sprinkle over remaining pine nuts. ENJOY!
