Serves 4
1) Pat down the kingfish steaks and season with salt and pepper.
2) In a small bowl combine the wine, salt, Worchester sauce, lemon juice, dry mustard, sour cream, paprika and parsley, mixing until smooth and then set aside.
3) Melt 2 Tbsp butter in a large saucepan on medium heat. Add onions and cook until soft. Add the mushrooms and cook for three minutes. Remove from the saucepan and set aside.
4) Bring a large pot of salted water to the boil and cook the fresh fettuccine for approximately four minutes or until al dente. Drain and set aside.
5) Add the remaining 2 Tbsp of butter to the saucepan and turn the heat up to high. Sauté the kingfish steaks for approx. 1-2 minutes each side until golden and just cooked through. Don’t overcook the fish! Set aside.
6) Adjust the frying pan to medium heat and return the onions and mushrooms to the pan along with the sour cream mixture. Stir gently to combine and heat through. Add the fettuccine to the sauce and stir to combine.
7) Serve the stroganoff with a kingfish steak on top and garnish with a sprinkle of parsley and paprika. ENJOY!
