Bradley Pastrami

Recipe is pretty flexible and simple. Im sure you could add anything you like, you may even like to try a little hot sauce with the mustard.

Ingredients

1 x piece of corned beef ( I cut down into 2 smaller pieces)
2 x Tablespoon Cracked Pepper
2 x Tablespoon Garlic Powder
1 x Tablespoon Corriander Seeds
Mustard ( I used Dijon)

Method

Wash beef and trim away any excess fat. Pat dry with paper towels. Massage a good amount of mustard into the meat.

Blend pepper, garlic and corriander seeds and coat meat with mixture. Wrap in Glad Warp and leave in fridge overnight.

Preheat Bradley to about 105-110C.

Put the beef in to smoke.

Cook untill meat themomoter reaches 77C.
