Bottled Trout

Trout
1 teasp of common salt
2 tablesp of vinegar
1 tablesp of olive oil

Method

Wash, skin and cut fish into chunks

Place fish into pint sized preserving jars

Put seals on and screw tight.

Place cloth on a rack on the bottom of a large saucepan to stop jars from cracking. Put jars into saucepan and cover with water.

Heat till boiling and simmer gently for 3 hours.

Store for at least 3 months
