Knives with surface rust

Hi carbon steel knives are great knifes , they are a lot easier to sharpen than stainless and they generally keep there edge better. They will rust, but often its only a surface rust. A good way to clean them up is to have a bit of pummice on board. Wet the pummice and do semi circles along the blade to remove the rust and keep the knife in good condition without taking your edge of the knife   (courtesy of Terry King)
