At the risk of appearing pedantic would like to point out that
dish is not sashimi, neither is it raw if it has languished in lemon
juice but is more of a Pacific Island or Tahitian type of fish salad.
 
Sahimi originates from Japan & is very thinly cut slithers of chilled
fresh fillets sliced diagonally then served raw usually dipped in Japanese
soy & wasabi with pickled ginger optional.
 
IMO in the absence of ultra fresh tuna trevally makes the best ever sashimi
followed by kingfish with snapper well down the list.
 
Basically the oily species suit best & because they are oily must be used fresh
as poss as not much good if kept longer than a day & definitely no good if frozen.

Mint looking day  & nice looking dish, bazza's right though.
 
Intrestingly enough bazza the Japanese don't limit themselves to oily fish, the will eat almost anything raw. Personally mostly prefer oily fish but john dory makes stunning sashimi

You are correct about the Sashimi, that was my error, it is definitely not sashimi.  However, as we are being pedantic Wink, it is raw.  The definition of raw is "uncoooked" or in a "natural or nearly natural state".  The fish was marinated in the lemon for less than 10 minutes which really only added flavour.  The flesh still looked the same or very similar to when it was filleted.  This is far less than if you marinated steak or any other meat, which we certainly would not call cooked regardless of how long we marinated it.  However, if we marinated the fish for a number of hours or overnight, then it would not be in its "natural or nearly natural state", in which case I could be persuaded it is at least partly "cooked"
 
Either way, the Chef called it "Raw fish", and who am I to argue!  Try the dish, it is a fantastic meal or snack, and very  easy to prepare.

I have served snapper, kahawai, john dory and trevally on the same plate as sashimi and asked guests to rate. All fish caught same day as the tasting.

All agreed the kahawai was the best. (I didn't tell them until they had voted).

Try it - as long as the red meat is trimmed and it is super-fresh you might be surprised!

Can I suggest that you can improve the quality of your sashimi if you follow some basics.

And yes straight away is good but the best formula based on Japanese food handling follows a principle.

Kill gut and chill.
No water salt or fresh at any time from now.
Fillet on second day and chill.
Cut for sashimi on the third day and allow to come to room temp after cut before eating.

Just a technique, which is worth it depending on your food deference.
Still cruising in my now sweetas pimped out Southern 755 HT0!
