Sahimi originates from Japan & is very thinly cut slithers of chilled
fresh fillets sliced diagonally then served raw usually dipped in Japanese
soy & wasabi with pickled ginger optional.
IMO in the absence of ultra fresh tuna trevally makes the best ever sashimi
followed by kingfish with snapper well down the list.
Basically the oily species suit best & because they are oily must be used fresh
as poss as not much good if kept longer than a day & definitely no good if frozen.
