Can anyone give me some pointers on buying a smoker ?

I want something that will smoke within 1 hour, not the longer 6 hour ones.

Any tips appreciated, thanks

Just any of those small hot smoker units would be fine mate. That is, if you just want to do a single fish at a time sort of idea.

I got one of those electric cabinet smokers a few months back, has a small electric powered auger feeding sawdust from an externaly mounted hopper onto a pan on an electric stove ring inside the smoker, and it smokes stuff brilliantly. Admittedly, for a cabinet full of fish, like a dozen puka wings, various chunks of flesh etc etc it takes a long time (pretty much over night) but for just a single fish, it is a lot quicker.

However, for just a quickie one hour smoke? Those little Kilwell smoker things are what you are after. All much of a muchness, your call, galv tin or stainless.

and on that note, anyone want to join me int he project of turning our kaput dryer into a hot and cold smoker? Control panel and pcb blew..cheaper to buy a new drier than a new pcb. The element and motor in perfect condition. Also has an independent extraction fan which could easily be reversed.
