Kingfish niçoise

Anchovy fillets, finely chopped Basil leaves Egg yolks White wine vinegar Canola oil (or any other neutral oil, can substitute 50ml for Olive oil) Boiling water |

Gourmet potatoes, cooked Tomatoes, segmented (or halved cherry tomatoes) Runner beans, vine end trimmed & blanched Niçoise olives (tiny black olives) Medium boiled eggs, refreshed, peeled & halved Olive oil Kingfish steaks |
4 In a food processor, blitz the anchovy, basil, egg yolks and balsamic vinegar
4 With the motor running, pour in the oil in a steady stream to make a mayonnaise and adjust the consistency with boiling water
Garnish:
4 In a separate mixing bowl, toss together the cocktail potatoes, cherry tomatoes, beans and olives. Dress this with the some of the mayonnaise
4 Heat a sauté pan, coat the kingfish steaks in olive oil and sea salt, sear both sides in the pan, transfer to a 160°c oven & cook to medium rare (& absolutely no more than medium)
4 Remove from the pan and cut into 3-4 slices
4 Arrange a the salad with dressed ingredients, the seasoned boiled eggs and the tuna
4 Dress with a little more mayonnaise
4 Additional anchovies may be added if desired

Tuna with Watercress salad.
Ingrediants:
2 tablespoons of orange juice
1 tablespoon soy sauce
1 tablespoon sesame oil
1 teaspoon minced ginger (fresh is always best)
1/2 teaspoon hot sauce (I use Tobasco)
1/4 teaspoon pepper
1/2 cup finely sliced green onions
1/2 cup of water chestnuts, can also use walnuts but not as nice
1 tablespoon toasted sesame seeds
1 Tuna steak, about an 1-inch thick (or marlin)
1/2 teaspoon canola oil
A pinch of salt
4 cups watercress, washed and cut up.
Directions:
1. Preheat grill medium to high
2. Mix the orange juice, soy sauce, sesame oil, ginger, hot sauce and 1/8 teaspoon of pepper in a bowl.
Put half the dressing in a small bowl and add the green onions, water chestnuts and sesame seeds, and mix.
3. Rub tuna with canola oil and sprinkle with salt the remaining 1/8 teaspoon pepper, I grill for around 4 to 5 minutes per side.
4. Add watercress to the large bowl and toss to coat with the remaining dressing.
Cut the tuna into slices, divide the watercress between 2 plates and top with the tuna and green onion-ginger "relish"
Wash down with a chilled beer, under the pohutukawa trees down at the beach.

A super simple recipie to add that little bit of extra flavour and texture to our humble scollie, and you may just



Title: The healthy alternative to eating Smoked Wild Pork Bacon and a slab of
Ruahine Venison Rump.
My wife and I came up with this creative dish after a week of solid meat and
spuds for dinner. We decided the calorie intake was getting a bit ridiculous so
we decided to add some spice to it all.
Ingredients:
1lb venison (rump will do)
1/4 cup of Brown sugar
1/4 cup of Sweet Chilli sauce
6 strips of your own Manuka Honey and Dill smoked Pork Bacon (packed bacon will
not suffice!)
2 large Kumara
1/2 cup of brown sugar
2 Tbsp Balsamic Vinaigrette
2 large tomatoes
1 bag of Mesclun salad
1/2 cup of fresh herb (parsley goes great with this dish)
1/2 cup of roasted cashews
1/4 cup of mixed seeds, pumpkin, pine, sesame, sunflower etc
1/4 cup of Red Wine Vinegar
1/4 cup of Maple syrup
Ranch dressing
1. Meat prep.
2. Kumara prep.
3. Salad prep.
Place in a large bowl:

greens and the dish will display a semi-sophisticated side of you shes probably
never seen before
Recipe Name: DJ Mikes Funky Chunky Smoked Fish Cakes (from 'Nam).
Please note that I took a "bucket chemistry" approach to the ingredients, and just kept adding more of each until I felt the consistency was right. We made about 25 ten cm diameter cakes which was pretty excessive. The quantities specified below are a rough guide only and depending on how much fish you have, you may need to add more or less of some ingredients.
List of ingredients:
500g Smoked fish
2 cups Breadcrumbs (Vogels whizzed up in a food processor is best but any will do)
3 x Eggs
1 x Onion
3 - 4 cloves of Garlic (to taste)
1 x handful of fresh chives (chopped up)
0.5 - 1 cup of flour
Salt & Pepper (to taste)
1 x tbsp Mixed herbs (dried)
1 x tbsp Cajun spices (optional)
Method:
Smoke the fish as you normally would. You can prep all the dry ingredients while this is happening or use fish already smoked.
Chop the onion and garlic finely and brown in a pan.
In a decent sized bowl add the breadcrumbs, onion, garlic, herbs, spices and mix well.
Take the fish and add it to the mix. I waited till it had cooled slightly then ripped it into thumbnail sized flakes by hand. You can probably use a fork if its still hot.
Blend all the ingredients, add the eggs, blend more, then dust on the flour slowly and stir until the mix holds together fairly well. You may need to add more egg if there is too much flour and not enough binding of the ingredients. You can add a little milk to hold the mix together if it's being stubborn.
Form into cakes by hand. Ours were about 10cm across and ~2cm thick.
Coat the formed cakes in breadcrumbs (I use a plate with crumbs and a small amount of spices/herbs to taste), then shallow fry in olive oil. It's handy to do one or two test cakes to see how your mix holds up in the pan, then test and adjust with more eggs or flour if required. If it's not binding together you will soon tell.
Serve with your favorite veges and a side of fries, then wash down with a decent beer.
