yep - get them in fresh water for 24 hours to express the sand...
 
Steam them open in lidded pot with a small amount of fish stock or wine or beer or water (whatever you have). Shell and finely chop pipis.
 
In a bowl - mix the pipi meat with chopped spring onion, grated ginger, mashed garlic (1 clove), finely sliced fresh chili, corn flour for binding, salt and pepper, splash of lime juice and a small amount of coconut cream until the batter is softer than dough but not runny.
 
heat a wok with canola oil, drop spoonfills of the batter into the hot oil, it should only take 30 seconds or so to cook. Eat with dipping sauces.
 
Not really fritters - more pipi balls.

Geez that sounds delicious Barbary never heard of doing them that way ,will be down the end of the street getting some pipis tommorrow to try that out

 Like babary said.. leave them over night in fresh water to spit the sand out..

But IMO Pipi best served in bowl of vinegar with diced onion and freshly baked ( or chubby loaf ) bread ala nautraal

A really good tip an elderly Maori gent gave me many years ago to get rid of sand etc is to put shellfish in a bucket of fresh seawater, place a light handful of BRAN on surface and leave for at least ONE tide cycle. Yes shellfish know this in ure bucket!! Usually next morning the shellfish have fed on ure bran and expelled all the sand. Once cooked are delicious with bran in them.

I have always believed that sea water is best at least for Tuatua's.  If you stick some sort of mesh in the bottom of the bucket then bottom layer of shellfish won't have a chance of sucking in any sand that the others expelled.

Weird thing when shelling them though, you always end up with only 1/4 of the amount of pipis that you started with. 

Whit-fisho, are there still any beds of tuatua's left on Buffalo?

I disagree about soaking them in fresh water unless it is fresh sea water as ceebee said. I have found that they wont open and expel in fresh water and the reason is pretty logical,--fresh water aint their natural environment. I have also found it useful to replace the sea water in the bucket once or twice. It keeps the water "cleaner and fresher" for the shellfish and also helps with re-oxygenation which I think has to be a factor. IMHO

Use Sea water and don't steam them open on the stove, just put them in the sink and pour boiling water over them, still heats them up but doesn't cook them, saves you cooking them twice ay...

Instead of bran I just use half a weetbix crushed and sprinkled over the top. (salt water) the next day nice fat pipi's with no sand.
