Newby here... 

Looking at buying something along the lines of a Reflex 485/515, Dominator, Haines 492, HH SF535, Buc 525 etc...

Car I have at the moment is an '07 Murano 2.5L front wheel drive. 

Boat ramp I would use has a pretty shallow angle to it and in good condition (Hobsonville Marina). I live about 5 min from that which is the only travel I'd really be doing.

So, the question is... Do I need to buy a new car first? The Murano is a bit of a workhorse and I'm not particularly fussed about it's long-term survival. But I also don't want to have to buy another car if I can help it.

I'd say that would do the job easily provided there the ramp is not unduly slippery.

The Muranos typically have 1500kg braked towing capacity, they are also equipped with a lovely CVT trans that really dislikes towing

You'll be fine. Towing for only a couple of miles each way....easy. Ramp traction would be your only issue, decent set of tyres  and go for it.
