Hi, I have been donated a pair of south island mutton birds, how the hell do you cook these sucka`s, these are from stewart island so they must be kosher,

Muttonbird or Sooty Shearwater


These are native seabirds known as Titi in Maori. Because they are seabirds, their flesh is tough, salty and has a strong fishy taste to them, unless treated properly they are quite� an acquired taste, which has been described as chicken stuffed with kippers! They are readily available in New Zealand and normally bought (strangely enough) from fishmongers!


To remove or tone down the strong flavour; the plucked and drawn bird is best soaked for a day, with the water being changed every 8 hours, then boiled for at least 45 minutes, the water changed and re-boiled and then repeated a third time until the flesh has softened. It may then be slowly grilled or roasted to taste

The best recipe is to swap them for some fish and chips at the local takeaways.
Nobody has ever come up with a great idea after a second bottle of water.

I tried muttonbird once. Bloody salty it is!

Occassionally they come up for sale in the seafood department at the supermarket.

Not good for a quick meal with that sort of preparation I guess.

I suppose it's the maori coming out in me but I quite like the beasts.

Follow recipe as above and then roast in a sour cream and Mustard sauce with heaps of pepper  (I like my food hot).

If the world didn't suck we'ed all fall off!

Mmmmmmm, Mutton birds!

Yum, I miss them.  My old man will have a good recipe for them, so I will ask him.

The way I have cooked them before, is boiling them for about an hour, then change the water, and boil again for an hour.  Do this for a couple of times, then grill them under a hot grill for about 30 - 35 mins.

I will post my old mans recipe if I get one soon!

Speaking from experience, the answer is yes.  Well. my landlord did mind.  I had been to see her earlier though, to borrow the spade to dig the pit.

When she asked where we were oing it I replied "at a mates place".  She did not believe me when the next day, standing next to the bloody great hole in the ground and beer bottles everywhere, plus empty keg, i said"he pulled out, so we did it here".  Funny that.

Still, great party.
