My Yakking uniform : 
Dayglow orange cap with suncape attached,
Cheapie Warehouse steamer(worn at half mast - keeps spines out of the legs)
Dayglow orange Tee with reflective stripes on sleeves on top(notice a theme hereLOL)
Diving bootees
PFD
 
Be visible, avoid cotton.

For the top I usually wear an icebreaker merino long sleeve as the first layer and if it is colder, add on a windbreaker. I would like to invest in a proper splash jacket in the near future. The icebreaker is worth the money as it dries very quickly and does not get cold when wet. It doesn't smell too. For the bottom, I wear 2.5mm neoprene shorts. I would like neoprene longs but they are hard to find. I also wear a boonie hat and of course a PFD.

There was/is threads on this if you do a bit of a search although from memory the biggest one is about winter gear.

Also goes without say I always have two things on, my PFD and sunscreen.....

Spring I wear my 4oz Rasdex shortie (custom) paddle top with either a long or short sleave poly prop, and either my fleese-lined boardies or 3mm surf longs and dive boots.

In the hotter/summer months I wear poly prop short sleave and a rasdex 2oz shortie paddle top or if its really hot I'll just go a poly singlet, boardies and fin socks with crocs on ma feets.

Winter I wear all sorts of crap to much to list.

I wear mountain biking gloves to, but not always for warm, mainly for handling fish and braid etc, plus if you get fish oils from bait etc on your hands it can be a pain to hold the paddle.

Check out Bodyline, they do make them but I had to get mine customed cause I'm a log legged bugger.

I typically wear a Ice breaker Skin layer top. Over that I wear a old Gore-tex Jacket then my PFD.

On my legs. I wear quick drying nylon pants, if it looks cold I would wear a pair of cheap waterproof pants. I thought about buying paddling pants but could not justify the price.

On my feet I wear anything.

On my head I wear a nylon wide bream hat. I should wear sunglasses but I am to afraid to wear my expensive ones.

So in general. I cover up as much as possible to protect myself from the sun and from fish spikes. All my clothing is either waterproof or quick drying. Most is also highly breathable.

In winter I wear Extrasport paddle pants and dive booties but find that I still get wet feet which freeze after a while.   Lately some of us in the Naki have experimented with breathable trout fishing waders which have integral stocking foot booties attached.    On my feet I wear plastic sandals from the Warehouse that have heel protection.  Totally waterproof and very comfortable.   
 
The other day I purposely rolled over and was in the water for about five min.    Since I wore a tight wading belt and a well adjusted PFD little water got in as the external water pressure pushed out the air after which the material clung tightly to my legs.   I had no trouble climbing back on board.   
 
The Ron Thompson waders retail for $190 and are well worth the price for staying warm.
 
During hot summer days I wear shorts and polyprop tops.    Always have a breathable/waterproof top stored for when the weather packs up.    Hat, sunglasses and sunscreen are a given at all times.

if its cold/wet i use a warehouse $10 raincoat
 
here in tropical wellington thats all that is needed year round

of course it goes without saying that i have a PFD as well and when its real hot i have a water bladder in a pack (off trademe 3l bladder c/w pack for $15)

Just wondering how thoughs that are using purpose made paddle tops and pants find them they all claim to be breathable and splash proof.
 
Do most people find this to be the case?
 
Just looking at the prices of them the sky seams to be the limit do people using them find it to be money well spent?

I personally love mine, and wouldn't be with out them.
Splash proof YES, until they get worn out and old.
Breathable...... its hard for any top under a PFD to be breathable.

In my case I've had to get all my paddle tops custom made seeing as how I'm apparently the biggest kayaker on the planet because NOTHING off the rack fits. So to say value for money... probably not cause it costs me about $50-70 more because of the custom fitting. Money well spent, yes, I paddle all year now pretty comfortably.

Like Badfish said, Bodyline neopreme pants, dive booties and polar fleese. Over the top a wind breaker.  Gone away from too much up top and I too over heat while paddling.  Had a spring suit but found it too restricting

OK don't laugh, but you did ask
 
In winter I wear thermals (top & Bottom)under a two piece wet suit. Over that I wear 5 layer breatheable water proof waders and then some old trackie pants and long sleeved shirt to keep the fish smell off. A life jacket and a dri as a bone vest. OH, gumboots a hat and a glove on my fish handling hand. In rough surf I useally end up wearing my Kayak.
 
IN summer I drop a few layers off, however I allways wear my waders.
The solution to any problem - work, money, love, whatever - is to go fishing - the worse the problem the longer the fishing trip should be.
