This is so easy & so yum....

Chop up a red capsicum, red onion and toss into pan and fry in a little olive oil, then add a tin of Thai conconut milk and  stir in some green curry paste (depends on how hot you like it, takes a bit of practice to get it right) then throw in some nice chunks of snapper. Leave to simmer. Whilst fish cooking, steam some, (vege's, carrot, broccoli, cauli) and add to pan toward the end, throw a slash of fish sauce in for extra flavour, serve on rice.....YUM
