I made up some dough for piper bait on Sunday, but the swell was pretty stiff and I didn't see any. Just before leaving I put a big lump on the snapper hook and chucked it in. It immediately got hit, but no hookup, and came in misshapen and seriously bitten. Had another go and it got chewed off the hook. Packed it in at that stage, but it's something worth another look I reckon.

It was a slow day on squid and pillies, they were coming back completely untouched a lot of the time. The dough got hit straight away. This was plain flour and water. You could add fish oil and something fibrous to bind it. You could even slop in a bit of gulp softie juice.

Anyone used dough before for anything bigger than piper? I know people use dough for carp and other coarse fish, seems no reason that snapper shouldn't have a go. Parore would probably be another candidate.

If it works, there are a few benefits, like you can make it yourself when you can't get to the baitos, it's very visible (it sort of glows), cheap as chips, no chance the hook point can get masked, you can nibble on it if you're peckish...

have tried chunking the dough baits to rats at the omokoroa wharf a couple of times, they would take the chunks all good, but when i put some on a hook they stayed away from it.  doesnt mean i wont try it again tho.

Caught heaps of coarse fish on dough and alwasy thought about using it for snappers. Fish oil is a good idea to start with. Make round shapes and boil  to make it tough to stay on hooks.

Any special recipe mate? I'd guess mussel juice would be a killer. Do you mix in cotton wool etc to help it hold to the hook?

In these Covid times I am looking at budget fishing methods and dough bait is high on my list.
I am thinking about mixing a can of sardines with flour since sardine oil is a known piper attractant.

Target species bait fish which I will slide bait into Raglan Harbour land based. I have never fished the Harbour, however recently moved to the Waikato.

That is the plan Stan.

As a food technologist, this is a very interesting idea. Here are some off the cuff embellishments.

Boiling the dough to make it tougher sounds reasonable, but may result in a sticky surface.  You might need to roll the boiled dough in flour to dry it out a bit for easier handling.

Mixing the dough thoroughly in mum's cake mixer helps develop the gluten and make the dough tougher.  Most "cake" mixers have a dough hook for mixing dough, and use this or you may bug*** mum's pride & joy.

Use strong flour because it has more gluten.  eg Champion or Pam's "High Grade".  It's intended for making bread.

It might be possible to buy gluten from a supermarket, but a quick Google suggested it's not very common.  Extra gluten (say 2%) will make the dough tougher.  It's available from food ingredient suppliers. e.g https://www.mpbio.com/nz/gluten-10-kg

I've always used MSG (monosodium glutamate) in my berley, at around 1%.  You can buy 500g bags of MSG from Chinese shops e.g. Tai Ping, Wah Lee, etc.  MSG is a fish attractant.

Using fish oil will improve the fishiness of the dough but will also weaken it, so only use around 0.5 to 1%.

About 1 to 2% gulp juice to replace some of the water in the dough is an excellent idea - this won't harm the toughness of the dough as much as fish oil.

Adding some visual interest may help.  Pinch off about golf-ball sized piece of dough, roll it into a minnow shape, then roll it in UV glitter: https://nz.dhgate.com/product/100g-fluorescent-powder-diy-bright-nail-art/413612655.html#s1-6-1;nz|1321760877

You will need to freeze the dough if you have any left over, otherwise it will rise (wild yeast) and/or go mouldy.  Alternatively, add 2% vinegar (or 0.2% citric acid powder) and 0.1% potassium sorbate (https://www.haurakihomebrew.co.nz/products/wine-stabiliser)  or sodium benzoate for a longer shelf life at ambient temperature.

I'm sure other food techies will have other improvements.

Flavoured dough is a good bait for wharf species, but doesn't stand up well to small fish pecking at it, so best suited to float fishing or light ledger rigs which are sensitive to small bites.
