Im currently reading a book by Anthony Boudaine famous yank chef with 3 michelin stars ( a big thing for chefs ) he does a tv programme going around the world sampling various cusines and cultures is very funny and excellent writer.
I digress .........he describes how he enters the famous fish market in Tokoyo accompanied by an equally famous Japanese sushi chef, they pick various fish and seafood items out , but get this - the Japs upon selecting Sea Bream and Snapper , which , are still alive - make a small incision into the spine just behind the head and then poke a small piece of wire into the marrow causing immediate paralysis ,and putting the fish into a kind of suspended animation but not killing them this means that they are able to carry on shopping and whatever but arrive back to their kitchens hours later and only then do they despatch the very very fresh fish.

Fact or fiction ? Boudaine is very descriptive as to what he saw, was amazed at the cleverness and the fact that it worked .......... you fullas ever heard of anything like this ?would seem a good way to try and keep fish fresh if rockhopping etc ?

thats him Damo , smokes a zillion ciggies , constantley drunk but very down to earth and genuine especially for a yank ........much like Keith Floyd.

Thanks for that Tobes ive never heard of that before , a crusty old seadog like Damo probably done it though .

That's him. Bushpig's body's like that too, in a Mount Eden-ish sort of way.

 

It could be right. I read a report of Bluefin tuna (big ones)being dealt to by spiking the spinal cord with a piece of 400kg monofilament before being  sent to tokyo. Similar sort of thing.

Nobody has ever come up with a great idea after a second bottle of water.
