when your smoking fish can you use fresh leaves, say pohutakawa etc ? or do you really need to be using sawdust ?

i was thinking some good old manuka dust with a few leaves thrown in...would it be all good ?

A positive attitude may not solve all your problems, but it will annoy enough people to make it worth the effort.

thats the way that my father use to do it but Im told that some "green" leaves may cause horrible tastes of worst.

I sometimes cut a young branch of Tea Tree and put it on top of the saw dust. Particularly if I've not got much saw dust left

i have a few pieces of timber different flavours (tea tree,totara etc)and i just wip a few shavings off the required piece with my plane and throw them in no saw dust all good and you can mix the woods for different flavour too....

i heard if you put some pohutakawa leaves in the final stages of the smoke it makes the fish go nice golden brown

Try the dry flower heads off the Pohutekawa once they have droped the bloom and hardened up, loads of oils in the heads for a great flavour. Can also use ground pepper, cumin etc for an exotic spice up. Mix a bit in with the saw dust.  Good eating. F.T.
