Gunna - how about a mashed Wallaby recipe with rugby ball dressing?
Gidday Gunna, just a simple mashed spud with an equal proportion of lightly cooked fish, some chopped up bacon, parsley , onion & salt & pepper and an egg to stick it together. Roll it up into BALLS dip them in breadcrumbs, squish them flat and stick them in the frypan. Easy as. I'm sure there are fancier recipes but they would be too flash for me.

So you reckon this could be used for Snapper as well? Looking for a recipe for Snapper that allows me to freeze a batch for later.

Well I had my first meal last night using some of the 2 dozen large Snapper Fish cakes that are residing in my freezer.
