I haven't tried it, not as far as I know. Has anyone here eaten stingray? I probably mean shorttail stingray, but it would also be interesting to know how eagleray is for eating. How's it cooked? What's it taste like? I sort of doubt it tastes like chicken, since they're not a very sought-after fish (but I think they're more popular with some Pacific Island fishers). Is it like shark meat?

Forget stingray  - meat ratio much lower than eagles...besides eagles fight much better.
Basically, skin it, chunk it, soak it then curries, deep fried, sambal.....Clap

Eagle rays would probably be in the top three of my target species.

Crabsticks can be either three things- Rays Bream, Barracouta, or yes, you guessed it. Stingray.

SWMBO tells me Hoki is used as well - apparently it can take on the taste of anything, so depends what you use to spice it up with and what colouring you use too.
 
She's usually pretty good about these sorts of things...

Eaten it in Singapore, all the resturants have it, they are small though. Dont know how they cook it but like everything else they cook its nice. It only takes a few minutes to come out so they cant do too much to it, wraped up in a bananna leaf, just flakes off

caught tonnes of the things,they seem to follow me where every i go..
never tried to eat them though... you gotta be careful when buying cheap scollops because i've heard that sometimes it's just stingray. always look for the orange lip

scallops in many of the chinese eateries round the place are actually circles punched out of sting ray flaps. Taste ok.

In my hometown Melbourne it often used to sold in cheeky fish & chips shops years gone by as "FLAKE".....
Go the batter option and eat it with as much distraction (tomato sauce) as possible.

Pigs love them...cut them up with a axe and leave them on the edge of the bush...once they start to stink every pig in the area will be scrapping over it ....then its an easy conversion from a crap piece of sting ray to a nice wild pork roast

Stingrays are my freinds.
Stingrays bring kingfish for me to catch.
Stingrays "payback" people who are nasty toward them.
Stingrays taste like shet, if you really want to eat something nasty, can I suggest a spotty or twoLOL

have a mate by the name of Zane, (some may know him). a few years back he 'mistook' a small ray for a flouder, jamed his spear in it. Then let it go. he found it washed up dead the next day on the beach, seagulls had picked out it's guts and eyes but he took it home and ate it Dead apparently it tasted pretty bad, couldn't stomach the first mouthful. the thought of this has put me off. god knows what would posses anyone to want to eat a ray, let alone a dead one washed up.

I got sucked into the 'scallop bites' scam at a chinese takeway down westport, thought I had found the mean deal scallops for 50cents each. bought 20. turns out it was stinkray ate 2 tasted like crap biffed the rest.

Used to have a stingray come and visit me everyday. Same time same place. He would always be there. I named him Leroy. He was my mate. One day I took a friend down to my spot to get some snaps. No snaps but yup you guessed it My mate Harry hooked poor ol Leroy good and proper. Dragged him up the beach and Leroy was no more. Took him home and baked him with garlic and olive oil. Disgusting!!!!! Stunk out the whole house and tasted like cooked garbage. From then on I leave the poor buggas alone. Felt stink about killing and eating my mate too.

Spent a bit of time in Singapore many years back, where the most sought after dish at the time was Chilli Crab - all the visitors raved over it. I was never really impressed with it - it was messy to eat, and you ended up with a bloody great pile of crab shells and still felt hungry.  Then I discovered BBQ Stingray- same sized portion, cheaper price, no waste and absolutely delishimo!  They used only the wings, kept skin on, rubbed with a variety of spices, wrapped in banana leaves and grilled over charcoal embers.  It was by far the best fish dish I sampled in SE Asia, and would treat all my guests from NZ (without telling them what it was before the meal) - they couldn't believe it was stingray, & I usually had to call in the chef to confirm it!  I've since tried to emulate the recipe over here, but had difficulty without the banana leaves - wrapping in tinfoil just doesn't seem to "cut the mustard"
If you can get hold of banana leaves when you catch your next stingray, give it a go - you won't regret it!Thumbs%20Up

i heard  it was OK smoked, guess everything turns ok from smoking, The humble KY becomes a delicay, and even crappier fish like mullet and parore do ok in the smoker

It tastes disgusting, and there's no bones, no scales, no filleting. Not a real fish at all.

Reminds of the one Fishful Thinking got on a kahawai head out the back of Kawau. It was massive - nearly bigger than his boat - and it dragged him round the ocean for ages while we pissed ourselves laughing. Very entertaining it was.
 
I have eaten stingray done as raw fish Tahitian style. It was a while ago but I seem to recall that it was OK. Can't say I'd go targeting the things though.

Interesting photo you have on here Uncle with the Kingis following the ray. I had exactly the same thing happen last month in Kings of the Coro comp. A huge stingray cruised past with a 15kg king on each wingtip like fighter pilots escorting it! A cool sight.

Flag eating Stingray, many other nicer fish out there to eat! Leave them to the Killer Whales!
Apparently they like the livers?

Dunno bout rays normally but i too got sucked into buying the skate wings of whatever instead of scallops...except not at a cheap place but at Bracu in Bombay which made me pay $20 for 4 or something stupid. Said they were 'deepsea' so I thought maybe that's why they were lacking a roe...until the dude i work with (ex-comm fisho) told me the truth Angry.

ate it years ago !!
brought it home an skinned it ,filleted it of the carllage in the midle and put in tinfoil in butter on the bbq !!
no bones and tasted allright to me [ but pissed at the time ]
thought about doing it again a couple of times ?? but the time and effort to skin etc ,
not worth it

Yeah
I agree a great pic from Uncle, but have to admit have only
jusy ben able to view it, as full pic does not show & needs
scrolling sideways.
 
When it was first postd searched in vain for the ray & Kingi's
thinking they just look like rocks to me.
 
Of course they were indeed rocks but the fish are obvious to spot
after having scrolled.

Good replies, thank you. I'm not taking the piss. I'm actually sort of interested.
I'm getting the picture that stingray is not very nice to eat, inedible, if it hasn't been specially treated. It sounds like it is like shark meat, and steps must be taken to make sure it doesn't taste of ammonia. Sounds like it might be all right, though, when properly done.
INOV8A, There's something similar that goes on between cobia and some sort of ray in Australia. Might not be the same arrangement, though. Kingfish might be more interested in concealing themselves, less interested in picking up food that stingray unearth.

Uncle, leave the poems to Aunty eh?

One of my mates has an Indonesian cuzzy. He heads over to Rangi whenever he can get out, just to target rays. He doesn't do it for sport, just eating, so uses heavy gear. I'd rather leave them be and eat the usual fish out there. Have eaten skate and it had a pretty nice texture to it.

Just to add my 2 cents worth.
 
There are a cou[le of posts here referring to Singaporean rays and their culinary delicacy.
Have to agree with this wholeheartedly.
 
I lived there for 4 years and used to have a craving for ray or more correctly skate wings.
Y Knot talks about banana leaves, but I think they actually use pandang leaves to infuse the flavour. Similar to banana leaves but not the same.
A very popular dish is also to make a black pepper sauce........actually the same as the pepper crab base Singapore is so famous for. In one of the local hawker stores, there was an old Cantonese granny that showed me how to prepare one of the dishes for skate wings and they were just awesome.
 
The wings are the edible bits. Hack them off, skin them and grill over low heat BBQ ...... preferably charcoal, and baste with sauce. Seriously good!

I have tried cooking and eating them and never been impressed, although years and years ago my dad gave me some a neighbour of his smoked, it was quite tasty but never had any luck myself. I guess there's a trick to it.

Very easy things to target but i seldom catch them these days.

Here's one of my favourite recipes for Stingray, which funnily enough works well with many kinds of fish, and even some red meats.

1) remove the catch from your freezer and sit on the kitchen sink
2) fill a large empty container with Coke (the larger the better)
3) take some ice out from your freezer and break into pieces and slowly add to container
4) add a slice of lemon then some spirits such as Jim Beam, or even in Summer time Rum
4) discard the Ray and polish off the liquid

Yep, Have foul hooked long tail rays and just busted them before they stole all my line... Eagle Rays take a fly and I believe CraigW has landed them. I have had some good fights but from them but haven't boated one yet...
 
King's riding rays... sure is... FlyAngler Magazine in Aussie has already carried the story and the next Fishing News will reval all on our score on that with some input from Guru Uncle!
