500$ for a 24 pound snapper I got a fibre glass mount of, pretty happy with the finished product, will post a picture.

Yep, I like that too. I got a fibreglass mount of my 14kg fish, and I am really happy with that. My 15kg fish I just did a Gyotaku print onto fine cotton. Keen to do the bone thing next time for the 16kg model! (feeling smug as I type this)

A mate once bought a fish skeleton cast in glass… The glass had quite some big bubbles in it and had a lot of imperfections which made it look even better, like a piece of art. May be worth considering.

I'm sorry but this is one of the coolest mounts I have seen. Case that is a piece of art and you have solved my problem for when I catch a fish worthy of such a effort.
The 20lb+ Snapper club No Longer Eludes me Broken with a 12kg new PB
Goal for the next 12 months: catch another 20lb+ Snap and watch it swim away
Hook a King LB here in the Naki.

Yeah glad this got bumped up as I've never seen a bone mount before & its way cool!
I've never considered mounting a fish as it just seems wrong (to me) not to eat it if you killed it, this way you get the best of both worlds

Looks pretty awesome. What would be involved in doing this at home? or is it not very easy? I've seen the flatmates clean up possum skulls and stuff, and they looked alright. A fish would be a much bigger job though.
 
Can you just pick off as much flesh as possible and then use worms/maggots to clean up the last of it, then bleach the bones, and lastly fix bones back together (provided you actually know where all of the bones go or don't disrupt them too much).

Unfortunately the best method involves removing the flesh with dermestid beetles.  You might be able to take the fillets if you are very careful.
