Slow jigging as the name implys is very slow. Small controlled movements of the jig up and down or slow wind of a jig or worked slowly. Normally targeting snapper with kings and Trev's also caught
Normal jigging such as mechanical jigging is done at a much faster pace and normally targets fast moving fish such as kingfish

Simple for me. Soft plastics out fish everything else in the shallows. Slow jigs out fish everything else in the deeper water for me

Slow jigging is relative to the fish you are targeting, you wont catch a JD with mechanical jigging style and probably unlikely to catch a kingy, AJ using a super slow jigging  style.
Being able to adapt to the different fish you are targeting and being able to change styles/jigs etc to match different days. (eg some days doesnt matter what style or jig you use and next day is completely opposite)
The vid clip you posted at top of page is used mainly on slow jerk rods for tuna and AJ, much different to fishing slow jigs like inchiku or madaii jigs like we use mainly in NZ for snapper
Blackboat style in a post a couple above is great for NZ fishWink (i would call it "slow jerk")
Some great videos on youtube on different styles, google is your friendWink
