Whats the best way to set these up ?  as in which end to tie leader and hooks to....

I would rig them with a double hook rig, 3/0 on to top of jig(same as on long jigs). You could possibly run another set of double hooks of the bottom of the jig but you would need to use slow jerk to not foul any of the hooks on the leader.
Use hook set as in pic below

Perfect rig for those jigs... Must get some off you next time I'm down which should be this Friday

Yes that's what I would suggest as well, I've found to catch snapper on this style of jig - basically the same technique as same a slow jig, double hook off the top (by the eyes), no hooks at other end.

I am getting these hookrigs made atm, wont be in NZ for 3-4 weeks sorry. These are ones that i made up myself to fish the slow pitch jigs with.
