Not sure this is the right place to piut this ..but anyways.
Now, recently (within 5 weeks) I have been catching fish from a certain area within Akl. Now these fish have been mean..hard..and very fit,aggresive fish. They have been feeding at this particular spot on small crustations, shellfish and worms etc (they spew this up upon boating and evident during filleting) Basicly living on the mud for a period, as the crabs and shellfish are their diet.
Now does this diet affect the taste of the flesh????
I have noticed at filleting time they are..well...very full in the gut cavity and have a very strong odour..A mud/dirt type smell. Also during cooking they smell "different" and taste very strong.
The fish are caught..ikyed and put on a slurry with salt ice and a little sea water. WELL PRESERVED..no hint of turning bad. From catch to fridge as fillets is about 6 hrs. These fish are fresh and good.
Now last weekend we nailed fish from a totaly different area that were like roses in comparison....
Does the diet of the fish influence the flavour of the flesh?
