Hi

anyone have any hints on the smoking of groper wings?I have smoked before with just salt and brown sugar but would like to try some thing different

Crusader,

             PM Woody and ask him, he did some a few months ago that were absolutely perfect, he used some lemon pepper or sumink special. Any how they were the best I've ever tasted, I'm sure he'll give you the receipe.

 Your a magician they were excellent, the only thing is the people that didnt like the way i did them now cant get enough.

Do you smoke all your fish this way as i tried cod and perch and they also came out great.Thanks

Sorry about the PM stuff fellow Forum users but I wasn't sure whether Woody's reciepe was a one off..........So if Crusader says its a winner and all my family like it,  any chance of posting the reciepe on here Woody ??

Was a bit of experimentation to get it right.

Here goes.

1. Cover fish in a salt brine overnight in the fridge

2. Drain off brine, add favourite spices, mine were Thai seansoning,  Tabasco, a dash of chilli, and brown sugar.

3. Hot smoke as normal.

 

Nothing special Just use a little bit of kick to it.
