Sift a little flour onto a plate, add a sprinkle of lemon pepper and crushed sea salt and mix.
Lightly flour fillets. melt butter in a hot skillet and juice of one lemon. add fillets, turn once. smack it between a coupla bits of buttered bread and eat!

NO CONDIMENTS! lol.
Adding lemon juice to the butter before cooking, is a good way to soak it into the fish without marinading it, also gives a nice tang to the slightly cruncy flour coating.

Hey dudes

A tip for ultra clean preparation is to put all ingredients into plastic bag, inflate and shake. No dishes required and coats fillets superbly.

a good idea ceebee and one i use for flour coating my roasted taties and the like, not too keen on the fish in the bag as it gets bashed around a little and i find it affects the produce.

I hadn't thought of adding lemon juice to the butter. I usually squeeze lemon juice on while the fish is frying.

The ingredients in the plastic bag trick works a treat!

What's the cheapest type of meat? Dear balls. They're under a buck.

3rd time I've used this recipe now and it gets better every time. Thank christ my mate went fishing this morning. Got home to find some fish in a cooler with ice waiting for me and a note "enjoy"... Not sure who it was yet.

Yes it was me, I screwed it up for everyone.

I use a touch of Cajun rub instead of the lemon pepper and do kahawai or blue mack strips as thick as my finger like this. By using thin pieces, you can cook it in seconds and it is deliciously moist and flavoursome. Never any leftovers and guests love it.

Works very well on the hot bbq as a starter/filler.

I've tried all the other snapper recepies and this is still the best. Pity it took me a while to find it. Print time.

I add oil and a knob of butter, stops butter burning, then I squeeze lemon juice over the fillets after 1 side is flipped which degreases the pan and stops butter and flour sprinkles that get in the oil from burning. Wipe out pan and start again. This is the only way to eat fresh fish, my family never go past it. Agreed nothing compares.

In the flour I simply put a bit of crushed sae salt and some powdered white pepper.

Even easier than adding lemon to the butter is to use the lemon infused olive oil along with the butter. The fish seems to take the flavour of the lemon a bit better for some unknown reason.
Absolutely awesome recipe when used with a fillet of Trevally on a bed of rice.
