This is really just a post to get me off 199 but at any rate

One of the best recipies I know for cooking snapper / Tarakihi / Golden Snapper / pretty much any sort of white fleshed fish is a Mustard and Sour cream sauce from one of bill hohepa's fishing books.  IT'S GREAT!!!!

about 2 teaspoons of your fav mustard (Hot English for me) to every 200gms of Sourcream and add a teaspoon of Crushed Garlic (Note I LOVE Garlic).

Add other seasonings of choice (Paprika, Pepper, Cayenne Pepper etc) but generally something with a bit of bite. DON't add Oregano or thyme as this tends to make the flavour a bit overbearing.

Thats about it, Cover the fish in the sauce and bake in a slow (150 to 175c) oven for about 20 to 30mins

tried that one tonight kylie and it was damn good! gonna experiment with it with different fish, bloody easy too. cheers for that
