Hi lads.  My girlfriend cooked up a butterfish last night and it was really tough and chewy. It looked cooked through. It had been cooked quite slowly in flour and butter. 

I have had this problem before with butterfish.  Is it likely that the fish was cooked on too low a heat?  Or are some fish just tough?

May I suggest you send your Girlfriend for a few cooking lessons....?? It's important to have a partner that can cook.... You should know that!!!! Then there's the really good ones who know how to fillet the fish, clean the boat and crack open a cold one while you rest and watch the Rugby after a hard day at sea...

Hell... now I'm in Trouble ... Here comes the misses......

About the fish, I don't know why it went like that, how long was it cooked for Reidfish?

Hey Si, After I got back from my Fathers day fishin mission yesterday, Krissy came down pretty much straight away with a Cold Beer in one hand, a kid in the other and gave me a hand to get the boat sorted.....

Never had that problem mate, and as you know we end up eating a lot of butterfish down this way.

To be honest I can't imagine how you could make butter fish tuff unless you burnt it to a crisp. Normally its very soft.

Reid..was it fresh or frozen as this can make a difference to some fish, I dont know anything of Butters but it may be why not too many of them are eaten in the north. In the south there is only a choice of Butters or Cod.
Next time try wrapping it in tin foil as that will often soften things like that up

Ditto never had a problem, however one can taste the difference between small and large butters. Small ones are better tasting.

As the name suggest 'Butterfish' as soft as butter I guess!

Wgtn company excepted (they have to spear something apart from Tarakihi - now there is a fine eating fish)

Hi Reidfish,

The only way I have cooked them is to wrap them in tin-foil. Put onions, a slice of tomato, salt & pepper, a slice of lemon, any herbs you like, and cook them in the oven or on the BBQ.

Usually come out great.

Butterfish/Green bone are considered one of the top eating fish in New Zealand.

Fillets sell at up to 17$ Kg, not far from Terikihi and far above many other types.

Bushpig, you're nuts. They are one of the best fish in the sea.  Most people I feed it to go "wow! I haven't had fish this yummy before!" - because very few are caught by line fishermen and the shops up here rarely get it (quota just issued  in the South of the North I believe).

Was very very fresh (about 6 hours dead) so maybe it just wasn't cooked well enough through?  I guess I'll have to cook the next one instead of letting the missus do it. 

Tried marinating some koheru and butterfish the night before in lemon, garlic, olive oil, and orange, but the orange was a bit overpowering.  Woudl be Ok with kingfish, I guess.

Hi Reidfish, try tangelo instead of orange next time and see what you think. Shouldn't be too overpowering then.

Butters are normally very soft fleshed. Are you sure you hadn't peeved her off recently Reidfish, and she wasn't serving you up part of your favourite wetsuit?
