i am smoking some kingfish tommorrow for some folks at work and would appreciate any suggestions. should i go for the usual sea salt and brown sugar or are there better ways? cheers for any input, john

You can try Golden Syrup instead of brown sugar, or try sprinkling some Tuscan herb mix on it, doesnt hurt to be generous with it.

cheers smudge, didn't have any golden syrop but wasn't stingy with the tuscan herbs. it made a difference, very nice, everyone raved actually.

Howdy Smudge, I was just wondering if those tuscan herbs work on any fish that you want to smoke , and was also wondering where you get them from, cheers.

Hi Spina, I don't know about the tuscan herbs but cajun spices and cayenne pepper seems to go well with most fish I've smoked. Beware though, if you don't have a high tolerance for spicy food, go easy on the cayenne pepper!... it certainly clears the nostrils.

Hiya spina. They are a Masterfoods product I think any supermarket stocks it. It would be ok on any smoked fish, just gives it a little bit of bite.

Howdy Kingfishsi hows the fishing all good, yeah I have spent a bit of time around Asia and  here and there, I like my food spicy and hot, Nobody in the house other than me can eat it as hot as i do , so when I cook hot spicy food i have to do two lots, one for me and a different lot for every one else in the house.

Ah I tell them they dont know whats realy good to eat, Blimmen hot food pussies, Heh heh heh, Cheers.

Spicys all good!... at the place I used to work, a couple of guys used to have curry eating competitions... on one occasion a very hot vindaloo caused a nose bleed.

Another couple of guys went to the Asian markets to buy all these spicy noodles. They'd be sweating at the end of a sitting. You couldn't even read the packaging but the pic on the front of the pack had chillies on it so you knew it was going to be nasty... They called me a pussy and said I wouldn't be able to handle it... bah humbug, I stole the title of spicy noodle eating king!
