� 1 cooked crayfish
� 2 cups breadcrumbs
� 1 tbsp fresh parsley chopped
� 1 tbsp fresh basil chopped
� 2 tbsp lemon juice
� zest of 1/2 lemon
� cracked pepper
� olive oil

Cut crayfish in 1/2 and remove flesh. Chop flesh into small pieces and return to shell.

Combine breadcrumbs, herbs, lemon juice and lemon zest, stir until well mixed. Season with cracked pepper.

Pour in enough olive oil to make mixture moist. Sprinkle over flesh side of each cray 1/2 until well coated.

Grill for 5 minutes or until golden.
