I missed this post, I see your IP Address shows you're in California. Let me guess you work from home and need to use a VPN to keep you safe but you live in NZ right?

I see you haven't been back to check for replies. Did your hyperlink scam drag in anyone? We appear to get a lot of American traffic these days. Let me guess, your not based in 'merica nor NZ Am I right?

I've always used a good quality boning knife. My current on is a carbon steel blade Green River brand. I've never liked the long flexy bladed type of knife.

And Smudge no, I hadn't picked the post as a scam. Having said that I'm knocking 70 and still occasionally look for the pull start cord on my laptop.

Still, it's a good topic though Coutta. I use a variety of knives myself. I like a thin long bladed knife for some fish, a stiffer heavier knife for others but I am not a fan of very flexy knives

I have a Svord long and stiff steel blade.  keeps edge really well.  Not stainless, so you have to clean and oil after use, but then it keeps the edge really well
