I know, a bit of a shocker. Fish that tastes of fish! 

Snapper around 15lb. Ikied, straight in to salt ice. Not bled. Occasionally I bleed snapper, but not this time. Filleted soon after getting home. Stored dry in fridge overnight, eaten next day.

Lots of dark red meat when filleting. Ignored it because it's never much of an issue, but tasted a bit Sick to be honest. Other fish were OK and don't remember having this problem before, or at least not as bad.

Thoughts?

Did you bruise him when dealing to him. Cannot find fault with what you have said you did. Should of been very good.

Sounds odd, was the fish in good condition. Could it be what it was eating.

Great condition, very fat. Gorging itself on anchovies or pilchards I assume judging by the circumstances in which it was caught. White meat tasted good, but had very thick red meat between the white meat and the skin. I really should have cut it off when filleting, but never been an issue with snapper before.
