Two smaller size pieces three kg each of pork shoulder/pork butt. 
Combination of three pork rubs + spices.  
Cure for 36hrs. 
Smoked for 8hrs on 275F. 

This is my best so far ;)

and a side dish, hot little number... Jalapeños Poppers with prawns

What were the chillies wrapped in.

at this time of the year, where did you get the Jalapeños
I have some leftovers in the freezer I grew
love poppers bro, yours look fab..... do mine over apple wood chucks for smoke emmmmmm......
