� 18 mussels (I use the marinated mussels for a sweeter taste)
� 3/4 cup flour
� seafood soup mix
� 3/4 cup flour
� 1 egg
� pepper
� lemon
� butter (for frying)

Sift flour and soup mix into large bowl. Pour in any dregs left in the siv. Season with pepper. Make a well in centre of dry ingredients. Add egg yolk to milk and beat together. Pour into centre of well along with chopped mussels. Mix well until mixture is thoroughly combined. Beat egg whites until fluffy, add to mixture and stir in.

That's it, now heat a frying pan add the butter, add a tablespoon of mixture at a time, cook till bubbles appear on fritter then flip until both sides golden. Serve with lemon wedges.

What do the shells on New Zealand mussels look like?  I've made some nice looking lures inlaid with fragments of the Green Lip mussel that's commonly found in Singapore and South East Asia.  They have a pretty looking inner shell with a soft bluish green pearlescence, especially obvious when they are submerged.

Amendment to recipe: 2 lots of flour in ingredients, one should be 3/4 cup milk.
