On Sunday my wife, our son and I enjoyed a very pleasant days fishing at Waikawau mussel farms. We brought home our entitlement of 32cm to 42 cm fish and when I had filleted them I noticed that two of the fish were in skinny condition with milky white coloured flesh. The fillets of one of the fish was also quite mushy. I have noticed this before but never really thought too much about it. Does anyone know why the fish were in this condition and what causes it?

It was so "mushy", was damn near impossible to fillet, as can be seen by the messy job.

Slabs. Have seen the odd Kahawai like that. Flesh like jelly. Skinny as and they fight like a lump of seaweed.

Caught plenty like that when I used to fish the mussel farms
Love fishing, love my job. It's a bloody shame that they clash.

Thanks for sharing that. Maybe this season has just had more of it than usual so being noticed more. Interesting that Tomsta said they still tasted great. The one and only one we tried was crap.

Last time I fished in the firth, we took a lot of care to study the condition of the fish before keeping them. If they were even slightly thinner over the shoulder, then we put it back. It seemed to work well. Most of our fish had nice fillets, with only a couple starting to cloud up in colour.

The history is interesting:  i fished Auckland area 1987ish to 1999 and then from 2011, but do not remember milky-flesh snapper.  Pretty sure I caught some in that time.  Maybe it is just occasional years?

Still confused why this is a mystery given the mega $$$ value of the snapper fishery
