Grunta wrote: True that Smudge. I've been experimenting with a new fish cake recipe and kahawai is the go to without doubt. Essentially it's a combo of potato, tasty cheese, some red onion and coriander + salt & pepper (all to taste and add a bit of fresh chilli if you feel inclined). Mash the spuds then add an egg and the trick is also some breadcrumbs at that point to bind the base together. Cut the kahawai into small cubes and add to the mix (2/3 base to 1/3 kahawai seems to be about right) then lightly flour, dunk in some egg and then a layer of breadcrumbs and shallow fry in some oil for a minute or two 'till golden brown - don't over cook as you'll wreck the fish. Still a work in progress but pretty damn good. I always bleed the kahawai by nicking the arteries just inside the gill-plates and the prep is to remove all the bloodlines and red meat from the fillets - a bit fiddly but the flavour is outstanding if you do that well and the catch has been bleed, iced and well-cared for in the interim.
