This goes great with all seafood in fact any food!
 
2 tbsp peanut oil
1 clove garlic crushed/chopped
1 tsp finely grated ginger
1/3 cup sweet chilli sauce
1/3 cup plum sauce (use the Ayam brand this is a yellow sauce not the red)
2/3 cup chicken stock
1 tbsp brown sugar.
 
Heat oil in pan and fry garlic and ginger until fragrant. add remaining ingrediants and simmer uncovered for about 10 mins or until reduced to about 1 cup.
 
Or you could try this if you prefer.
 
Chilli sauce
 
1/2 cup sweet chilli sauce
1/4 cup lime juice
1 clove garlic chopped/crushed
1 tbsp fish sauce
optional: 2 small red chillis seeded and chopped
combine in a small bowl and mix well.
