Tonite I tried a variation on seafood rissotto I normally do,

arborio rice
block of fish stock (made from all my frozen snapper frames, never ever throw anything other than the guts and gills away)
asparagus
garlic
courgette
onion
smoked marlin (normally use scallops or snapper chunks) marlin went through whole dish as above

brown rice and onion and garlic, add stock a cup at a time until the rice doesnt take up any more, add veges, marlin and some parmesean cheese, very good.....

wash down with lots of wine
