What kind of fillet knife do you guys use and why?
I have were pretty cheap generic ones(bargain bin type of stuff) and really seem to struggle even after being sharpened.

I've always used a good quality boning knife. My current on is a carbon steel blade Green River brand. I've never liked the long flexy bladed type of knife.

And Smudge no, I hadn't picked the post as a scam. Having said that I'm knocking 70 and still occasionally look for the pull start cord on my laptop.

Still, it's a good topic though Coutta. I use a variety of knives myself. I like a thin long bladed knife for some fish, a stiffer heavier knife for others but I am not a fan of very flexy knives

I have a Svord long and stiff steel blade.  keeps edge really well.  Not stainless, so you have to clean and oil after use, but then it keeps the edge really well
