I saw a fish being broken down a while back and been looking for a video that may show it.
 And on good sized fish.. 50/60cm snapper, legal kingi plus
 Sort of went like this
  They make usual the cuts down from the back of the neck to the back of the wing.
Then this is where cant rem, think over back of neck.. the belly wasnt ripped open to gut out. Think there was a knick put in around the poo hole (???)
 They then bent the head backwards and all the gills, and gut came out in one piece, clean as.

 Then was broken down with wings , belly all separated and no bones (I think)
