Simrad Cruise 7........basics am I doing it wrong?

Hey peps,

So having been out half a dozen times with my new boat - it has a Simrad cruise 7 with std 83/200 transducer.

It performs really well - seems to keep up with the boat even when cruising around at 22-25knots.

My issue - if it even is an issue.......is I have never seen an "Arch"..... The best I get is colour next to knols or dips. My fishing has all been in water thats 10-50m nothing  massively deep. It doesnt seem to matter what setting i use, not that I know much about the settings. 

It seems to show the clearest images at 200mhz, 83 just fills the screen with clutter. 

The fish we are targeting are snapper, blue cod etc - and we have caught plenty, 24lber a few weeks back....but never see fish on the screen.......most of the fishing we are doing as at anchor.

Are there any easy settings or setups that I should be following?
